1 lb Goolsby's Sausage
16 oz One Box of Gnocchi
2 tbsp Extra Virgin Olive Oil
½ cup Sun-Dried Tomatoes
3 Cloves of Garlic
1 tsp Sage
1 tsp Italian Seasoning
1 cup Chicken Stock
2 cups Chopped Spinach
3 tbsp Sour Cream, full fat
2 tbsp Fresh Parmesan Cheese
Salt and Pepper, to taste
1Start by bringing a medium sized pot of salted water to a boil.
2Add in the gnocchi and cook according to package instructions or until it floats to the top. Once cooked, strain and set aside.
3Meanwhile, chop the spinach and sun-dried tomatoes.
4In the same pot, add 2 tbsp of olive oil and then the sun-dried tomatoes.
5Saute on medium heat for 2 minutes before adding in the sausage.
6Saute till the sausage is no longer pink and is cooked.
7Add in the crushed garlic and spices and sauté one minute before adding in the chicken stock, and sour cream.
8Add back in the cooked gnocchi and simmer on medium heat all together for 5 minutes.
9Toss in the parmesan cheese, stir to coat and serve!
